CRANBERRY MUFFINS
1¼ cup unbleached flour ½ cup sugar 2 teaspoon baking powder ¼ teaspoon salt 1 orange 1 cup (4 oz. by weight) CAPE BLANCO CRANBERRIES ¼ cup finely chopped filberts (hazelnuts) 1 egg 2 teaspoon sour cream ¼ cup orange juice 1 tablespoon Grand Marnier
Preheat oven to 350°. Mix flour, sugar, baking powder, salt, orange peel, CAPE BLANCO CRANBERRIES, and nuts. Add egg, sour cream, orange juice and Grand Marnier. Stir until batter is moist. Fill 8-greased muffin cups 2/3 full. Bake 25 minutes
