CRANBERRY CORDIAL
8 cups sugar 8 cups vodka (or gin) 28 whole cloves 1 orange peel 16 cups (4 lbs. by weight) CAPE BLANCO CRANBERRIES
In a non-metallic container that has a tightly fitting cover, mix the sugar and liquor. Stir to blend. Add cloves and orange peel. In a food processor using the metal blade, finely chop cranberries. Mix into the sugared liquor. Stir to blend. Cover and store in a cool place, shaking or stirring once a day for 2 weeks. Strain the mixture through a fine sieve, pressing to extract all liquid. Pour into well-drained jars and cap. Store at room temperature.
