APPLE-CRANBERRY CAKE
1¼ cups oil 3 eggs 2 cups sugar 3 cups flour 3 teaspoon soda ½ teaspoon salt 2 teaspoon cinnamon 2 teaspoon vanilla 1 teaspoon lemon juice 1 cup walnuts 1 cup raisins 1 cup (4 oz. by weight) CAPE BLANCO CRANBERRIES 3 diced apples
Beat eggs, add sugar, oil and other liquid ingredients, and mix well. Add dry ingredients, mix well. Add nuts, raisins, CAPE BLANCO CRANBERRIES, and apples last – fold in. Bake in greased and floured baking dish, 325 degrees for ½ hour. If using a bundt pan (it may take about an hour) – need to check.
