MITCH’S CRANBERRY PIE
1 ½ cups (6 oz. by weight) CAPE BLANCO CRANBERRIES 1 cup sugar 2-3 bananas chopped walnuts (optional) pie dough1 egg and ¼ cup milk sugar
Wash and de-stem CAPE BLANCO CRANBERRIES. Combine CAPE BLANCO CRANBERRIES and sugar. Cover and cook slowly until fruit is tender and clear. Cool. Line pie pan with plain pie dough. Cover bottom with thinly sliced bananas and walnuts (optional). Pour cranberry sauce over bananas and walnuts. Cover with strips of pie dough to form a lattice. OPTIONAL: Whip together egg and milk and brush over top of lattice, then sprinkle with sugar. Bake in hot oven (425 degrees) 15 minutes or until nicely browned.
Serve with whipped cream topping or ice cream.
