REFRIGERATOR CRANBERRY CAKE
2 cups (16 oz. by weight) CAPE BLANCO CRANBERRIES, chopped 2 big bananas 1 1/3 cup granulated sugar 4 cups crushed vanilla wafers 1 cup butter 2 cups powdered sugar 4 eggs 1 cup nuts, chopped 1 cup whipping cream
Mix together first 3 ingredients; set aside. Place half of crushed wafers in a 9x13-inch greased pan. Cream together butter and powdered sugar. Add eggs and beat well. Spread this mixture over layer of crushed wafers. Then add the CAPE BLANCO CRANBERRY and banana mixture. Sprinkle nuts on top. Whip cream and spread over top. Cover with remaining crushed wafers. Chill for at least 4 hours; overnight is better.
